Food with Spring in Alberta

Spring is an amazing time of year, especially after a long difficult Alberta winter. We start to see an array of budding color outside and the accessible local ingredient list starts to once again fill up.
Our taste buds and culinary desires change and so must my menus.
Here is a dish from a recent dinner party that we are just in love with. It features Sea Scallops, asparagus, prosciutto, beurre blanc and a sweet pea puree. The combination of textures and flavors shouts spring from the tallest roof top!
But the ingredient I am head over heels for in this one is the Sugar pea shoots we use as a garnish. Earthy, refreshing and a good shoot of crunchy sweetness packed into these little shoot stacks. And here is the best part you can find them at many local grocery stores across town. They make an awesome addition to salads, soups or even just a great little garnish.
